TTAVAS
The ttavas is one of the most characteristic oven cooked dishes of Cyprus, which can be found in different local variations. This dish includes finely shredded meat with onions, and depending on the region can be accompanied by rice, potatoes, tomato and/or wine.
The name of this dish derives from the namesake clay vessel within which the dish is prepared. As such, the ttavas, which is still used today, is a handle-less pot that looks like a reverse truncated cone with a circular, nearly flat base, walls strongly inclining outwards, a wide mouth with an incurved rim and a lid. Such vessels were manufactured in the past at the red clay pottery workshops of Troodos, like Kornos, Foini, Agios Dimitrios and Kaminaria.
