TALARI
Talaria were small weaved baskets exclusively used to produce cheese. They had a tall and narrow or short and wide cylindrical body and were usually made of sklinitzia, a type of bulrush. When the cheese was pressed in the talari, the whey escaped through the small crevices of the basket. The diameter and height of the talaria differed per the desired shape of the cheese. Often, after being pressed, the cheese was cut in smaller pieces, while the halloumi (Cyprus cheese) was boiled anew in the collected whey.
