HTIN AND SPICES HAND-MILL
Goudia (mortars) were a very important category of cooking tools used in Cypriot households. These two-part tools included the htin, namely the actual cup-shaped receptacle with or without a footed base in which ingredients were crushed or ground, and the htosierin, viz. the pestle used for crushing and grinding. They were usually made of stone, marble, bronze or wood, and they were used for crashing or grinding seeds, nuts, spices, salt and others.
Contrary to the above, in the 20th century, spices and coffee were grinded in small hand-mills as per technological advances in grinding technology.
